This recipe, friends, is a keeper. How do I know? I discovered this recipe about two years ago over on Pinterest, (it originally comes from Budget Bytes) and I started making it pretty regularly. We usually have leftovers when I make it, so it would make its way into the graduate office for lunch during my two years there. For those of you who may be new to the blog - I went to graduate school for two years (Sept. 2014 - May 2016), hence the graduate office! Every single time I brought in the fajitas for lunch everyone in the office was mesmerized by the smell. Literally everyone. People had serious lunch envy. If some of my graduate school galfriends are reading this, I'm sure you'll agree and may even be laughing a bit!
Like I said, these fajitas made it into the graduate office as my lunch many times, and eventually my good friend in the program, Jill, asked me for the recipe. It was pretty much the domino effect from there. Jill started bringing in leftover fajitas for her lunch and then a month later I think everyone in the office was bringing in fajitas for lunch. That's how good this recipe is! Once you make it once, it'll be on repeat in your house for a long, long time. PS: Shout out to my grad school friends and if any current second years are reading this I hope the fajita recipe is living on in the grad office this year!
This recipe isn't only delicious (it seriously tastes like you're out at a Mexican restaurant), it's about as easy as it can get. And guess what? The ingredients are pretty darn cheap usually! A cheap, easy, and yummy dinner? I'll take 15 please!
Alright friends, start writing these ingredients down...
For the seasoning you'll need...
1 tablespoon chili powder
- 1 tablespoon paprika
- 1/2 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon cumin
- 1/8 teaspoon cayenne pepper
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/2 tablespoon corn starch
For the fajitas you'll need...
- 2 small or 1 large onion
- 2 medium green bell peppers
- 1 medium red bell pepper
- 1 pound of chicken breast (sometimes I'll use more if I want extra leftovers)
- 2 tablespoons vegetable oil or olive oil
- 1 medium lime
- 1/4 bunch of cilantro (optional)
So, now you know what ingredients you'll need. Onto how to make them...
1. Preheat the oven to 400 degrees. Mix all of the ingredients for the fajita seasoning in a small bowl and set it aside.
2. Cut the onion and bell peppers into 1/4 to 1/2 inch strips. Place them in a 9x13 casserole dish. Slice the chicken breast into very thin strips and add it to the casserole dish.
3. Grab your seasoning and sprinkle it over the meat and the vegetables. Drizzle the vegetable oil over everything and then use your hands to toss the ingredients until everything is well-coated in oil and seasoning.
4. Bake in the oven for 35-40 minutes. Stir once when you reach the halfway point. Squeeze the juice from half of the lime over everything once it comes out of the oven.
5. Scoop a small amount of the fajita mixture onto a tortilla and top with cilantro, salsa, and any of your other favorite toppings!
That's it! It's really easy, guys. And guess what? It's a healthy choice too! The great thing about making your own fajitas at home is that you get to control what goes in them, which means I guarantee they'll be much lower in sodium.
