7 Things You Can Always Find in My Fridge

Hey there, friends! How's it going? I hope you're having a relaxing and fun weekend. I've been playing catch up this weekend on a lot of things on my to-do list that I've been putting off (oops) so it's been a productive one! Later today my sister, my mom, and I are heading to a local winery that's having a sampling event AKA all of the wine and cheese so the weekend will definitely be ending on a high note!

I wanted to stop by today and share with you all five things that you can almost always find in my fridge. So, let's just jump right into it!

7-things-in-fridge

1. Spinach or Spring Mix

I almost always have a bag of spinach or a bag of spring mix in the fridge. Spinach can be thrown into a side salad for dinner, the base of my salad for work lunches, or it can be thrown into a smoothie! A lot of times I'll buy a bag of frozen chopped spinach to keep for smoothies and then get a bag of spring mix for salads! Such an easy way to add some greens into your daily eats :)

2. Vanilla Soy Milk

A splash of vanilla soy milk is the perfect addition to my morning coffee! I love the creaminess it adds to my cup, and it adds the perfect amount of sweetness. I always have at least a small carton of this in the fridge!

3. Lemons

You can almost always find a lemon rolling around the produce drawer in the fridge at our house! I love adding lemon slices to my water, especially in the summer. It makes water a little less boring to drink ;P Lemons are also great to add to chicken or fish - just a little bit of lemon juice, salt, pepper, and EEVO and you're good to go!

4. Eggs

I always keep some eggs on hand each week in the fridge - they're an easy and quick week night dinner, a great snack when hard boiled, and of course nice to use for breakfast on the weekend! Try making a simple egg scramble one night this week. Just throw in some spinach, tomatoes, onions (and whatever else you have on hand) and you'll have a quick and nutritious dinner in no time!

5. Tessemae's Dressing

I talked about Tessemae's dressing last week, but I absolutely love having a bottle of this on hand at all times. I not only use it as a salad dressing for lunches during the week, but I'll also use it for dinners too! I'll get some chicken breasts and throw them into a large ziploc baggie, pour some Tessemae dressing over them, and let them sit in the fridge for the day. Voila! Easy and tasty chicken, whether you want to grill or bake it :)

6. Carrots

Carrots are a great snack to throw into your lunch or munch on throughout the day at home with some hummus AND easy and delicious for roasting in the oven as a side dish. If you haven't tried roasting carrots yet, do yourself a favor this week and give it a go!

7. Bread

I usually stick my bread into the freezer to ensure it won't go bad, and I try to always have a loaf waiting in there for me. Sometimes if I run out of salad mix during the week, a quick sandwich will do the trick for my work lunch the next day! I'll also sometimes quickly fry an egg to top a slice of toast with - easy, healthy, and filling lunch.

Alright, friends, that's it - seven things you can almost always find in my fridge! What ingredients/foods do you always have on hand? Let me know in the comments below!

What’s Been in My Lunch Lately

Hello, hello! How are you all doing? I hope that your weekend was full of relaxation time with just the right amount of fun :)

If you’ve been reading my blog posts or even Instagram posts you know that I started a new job recently, and with a job comes figuring out what to pack for lunch! I’m hoping to write a post about my job and schedule it for later this week to give you all a little life update too. But anyways, back to the main attraction: lunch food.

lunch-lately

So, where I work does have a cafeteria with some good options – they have a salad bar, etc., but I’ve still been trying to pack my lunch each day. Why you ask? 1. It saves me money and 2. I’m less tempted to pick something unhealthy. Can you guys relate to this? If I don’t pack my lunch and have all of these options in front of me I’m more likely to say “Oh, I’m just going to get some French fries, it’s no big deal.” Packing my lunch completely takes this out of the equation – I pack something healthy and that’s what I eat!

I’m totally a creature of habit when it comes to lunch. I’ll make and pack the same thing for about 2-3 weeks until I get sick of it, and then I’ll make something else for 2-3 weeks, and so on. I’m always looking for new healthy, tasty, and satisfying lunch options and I figured I’m not the only one so I thought I’d share what I’ve been packing with all of you!

I’ve been keeping it real simple recently. Let me run you through everything that is in my lunchbox.

I eat breakfast at home so that doesn’t come with me (recently it’s been some oatmeal with cinnamon and a sliced banana) so the first thing that I pack for the day is a morning snack. My snack for the morning has been the same since I started work about four weeks ago – a sliced apple with a packet of Justin’s peanut butter. I slice my apples the night before work and they’re still nice and crisp by the time I eat them the next morning. I love the packets of Justin’s peanut butter because they’re just the right amount and easy to throw in my lunch box!

The apple and peanut butter holds me over until lunch, which I usually eat around 12 or 12:30pm. I’ve also been keeping my lunch super easy and simple too – I buy a bag of Italian salad mix and a bag of spring mix at the grocery store and mix that in a good-sized Tupperware container. I top that with just a little bit of freshly shaved parmesan cheese and chicken that I sauté in EEVO. It’s easy to throw together, delicious, and satisfying. I also love knowing that I got a good amount of my greens in for the day! The dressing I use is Tessamae’s and you can find it at Whole Foods. It’s my favorite brand of dressings by far!

I also pack some Simple Mills cheddar crackers (or the sea salt flavor). For me, I need to have something crunchy in my lunch and these totally do the job. The ingredient list gets an A in my book - simple, few, and GOOD ingredients.

The final thing that goes into my lunch box are some mixed nuts. If hunger strikes in the late afternoon, I’ll munch on those!

And that’s it! I hope that if you were looking for something for lunch this gave you some new ideas :) I’m going to try something new out in the next few weeks, so I’ll make sure to post an update of my lunchbox then!

What do you pack for lunch? I'd love to get some ideas! Let's chat in the comments below :)
