Life Lately & A Delicious Frittata Recipe

Happy Sunday, friends! How's it going? I took last week off from blogging because we had some birthday celebrations going on. My birthday was the 19th of April and we celebrated with my family last weekend so I just wanted to take some time to relax and enjoy. We also celebrated this cutie's 14th birthday...

The weekend before my birthday I celebrated with a few of my girlfriends at a local winery called Va La. If you live in the Delaware/Philly area I definitely recommend checking this winery out! They're a very small vineyard and only make 4 wines each year, but man, they're GOOD! Their wine tasting is on the pricier side at $20 per person, but their pours are very generous. Each wine you taste they pair with a piece of delicious local cheese, and the tasting ends with a chocolate truffle. I mean, need I say more? My favorite wine was their Silk Red which is a dry rosato. Seriously, go check Va La out! 


So, that's been life lately - along with work, exercising, and all of the normal good stuff :) Now, onto what I'll be eating this week for breakfast...

This frittata recipe from Pbfingers blog is a delicious, savory, and healthy breakfast that can be made on Sunday and heated up during the week for breakfast. I love my morning oatmeal, but I'm getting a little bored of it so I'm excited to change it up with this frittata. I think you'll love it too! Follow the recipe below and let me know what you think :) 


  • 1 tablespoon EEVO
  • 1/2 sweet onion, diced
  • 1 small green pepper, diced
  • 2 large chicken sausage links, chopped 
  • 2 large heaping handfuls of fresh spinach (about 4 cups)
  • 3 eggs
  • 4 egg whites (I used 3/4 cup egg whites from a carton)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper 


  1. Set oven to broil on high.
  2. Heat olive oil over medium heat in a large, oven-safe skillet. Sautee onion and green pepper until softened (about 3-5 minutes). 
  3. As onion and pepper cook, combine eggs, egg whites, salt and pepper in a medium bowl, stirring to combine.
  4. Add the chicken to peppers and onion and cook for an additional 2 minutes. Add spinach and cook until wilted, about 1 minute. 
  5. Add eggs to skillet and lightly stir. Allow eggs to set (do not stir!) until sides are firm and middle still appears slightly wet, about 4 to 5 minutes.
  6. Transfer pan to the oven and broil for 3 to 5 minutes, until top of frittata begins to brown slightly. 
  7. Slice and serve! 

I recommend keeping a paper towel on top of your frittata while storing in the fridge to keep moisture from accumulating. Bon appetit! 



How to Make Easy Peel Hard Boiled Eggs

Hey there, friends! I'm stopping by on this fine Easter Sunday with a short post with some pretty handy tips. I don't know about you, but I LOVE deviled eggs on Easter. I also love having some hard boiled eggs on hand for snacks sometimes too! But you know what I DON'T love? When you're trying to peel the shell off of the eggs and they won't come off easily which means you end up tearing off half of the egg white. No bueno! 

Well, this time around when I was about to boil some eggs I decided to try out the Pioneer Woman's way of boiling eggs. Anyone else watch way too many episodes on The Food Network? 

Binge watching her shows totally paid off in this case because guess what?! The eggs were SO easy to peel and NOT ONE PIECE OF EGG WHITE CAME OFF. No, I'm not lying. Is it embarrassing that this made me extremely excited? No shame :)

So, since I think this is the best thing ever I obviously needed to share it with you all. So, if you hard boil eggs often and are sick of fighting with the shells when trying to peel them... read on!

Step 1:

Bring a medium pot of water to a boil and THEN add your eggs. Once your eggs are safely in the pot, lower to a simmer for 13 minutes. 

Step 2:

Prepare an ice bath for the eggs while they're cooking. Just grab a big bowl, add a good amount of ice, and fill it with cold water. 

Step 3:

Once the 13 minutes has ended, go ahead and put your eggs into the ice bath for five minutes.

Step 4:

Take your eggs out of the ice bath and crack them on the counter top and voila! The shells will come off in large pieces and you'll have tasty and PRETTY eggs. That matters, right? Right.

My Favorite Store-Bought Salad Dressing

Happy Sunday, friends! Doesn't the weekend just seem to pass by in a flash? I feel like it was just Friday about five minutes ago! Even though it seemed to go by quickly, I hope that you had a wonderful weekend. Mine was a good mix of having plans and relaxing - Friday night I headed out with a few of my friend's to celebrate one of my best galpal's birthdays, Saturday I went over to my sister's house for a bit, and today I just did some laundry and headed back over to my sister and brother-in-law's house to have them help me study for my personal training cert! 

Anyways, the main event of this post is to tell you guys about my absolute FAVORITE store bought salad dressing. As I was eating my salad at work this week I realized I hadn't shared this salad dressing with you all and immediately put it on my list for the post this week! Drum roll please ;P


My all-time favorite salad dressing is this homemade recipe I blogged about HERE, but when a gal's busy a store bought version is much easier, and that's where Tessamae's dressings come in. 

The story of how Tessamae's dressing came about goes something like this...

First of all, they're all tasty, honestly I haven't had one that I don't like. Second of all, there's NO artificial ingredients or any of the typical junk in other salad dressings you'd buy. For example, her Caesar dressing has the following ingredients: 
Organic EEVO, organic lemon juice, organic apple cider vinegar, organic mustard, organic spices, organic coconut aminos, sea salt, organic balsamic vinegar, organic ginger, organic dates, organic onion powder, and organic garlic powder. 

I mean, compare those ingredients to a typical Caesar dressing you get off the shelf at the grocery store... you can't beat Tessamae's. The ingredients in Tessamae's dressings are REAL ingredients that we can recognize and pronounce, AND they're DELICIOUS! 

My favorite dressings are the Lemon Garlic, Balsamic, and the Caesar! All of Tessamae's dressings are also awesome to use as a marinade for chicken or other meats and fish. So, if you're looking for a healthy salad dressing to spice up your lunch or dinner, grab a bottle of Tessamae's the next time you're at the grocery store! I find mine at Whole Foods, but I'm sure they're in other stores as well.

Lightened Up Lasagna Recipe

To be honest, I'm not usually a huge fan of lasagna. It always just seems too heavy and I end up feeling way too full afterwards. So, a few weeks ago when I found myself craving it I knew I didn't want to make the traditional recipe. What I made instead is a lightened up version of lasagna that has amazing flavor and will leave you wanting more! This recipe is easy to make and the perfect dinner to make on a Sunday night to have leftovers throughout the week. Keep on reading to get the recipe!



6 lasagna noodles
1 tbsp EEVO
1/2 cup chopped onion
1 chopped red pepper
1 pound ground turkey breast
1 tsp red pepper flakes
2 tsp chopped garlic
2 1/2 cups marinara sauce
2 cups shredded part-skim mozzarella cheese, divided
16 oz part skim ricotta cheese
1, 6oz bag of spinach
1/4 cup grated Parmesan cheese
2 egg whites
1/4 tsp black pepper
1/4 tsp garlic salt

The Directions:

1. Preheat your oven to 350 degrees. 
2. In a pot, bring several quarts of salted water to a boil. Add the lasagna noodles and cook until al dente, about 7 or 8 minutes. Remove from the water and place on a towel lined baking sheet (do not use paper towels - the paper will adhere to the noodles).
3. In a large saute pan, add EEVO, onion, and red pepper over medium-high heat. Saute until the onion and pepper begin to sweat. Next, add your ground turkey and garlic.
4. Continue to stir the turkey until it's cooked through, this should take about 10 minutes. Add your marinara sauce and bring to a boil. Reduce heat and allow to simmer for 8-10 minutes. Lastly, add your bag of spinach and allow to cook until wilted. Remove pan from heat.
5. In a large mixing bowl, add ONE cup of the mozzarella cheese and remaining ingredients. 
6. Spray an 8x8 baking dish with cooking spray. Arrange a layer of noodles on the bottom of the dish and then spread 3/4 of the turkey mixture on top. Next, spread half of the cheese mixture over the turkey mixture. Repeat the layers ending with lasagna noodles - make sure to spread some sauce on top of noodles to ensure they don't burn/dry out in the oven.
7. Cover and bake for 45 minutes. At that time, take the lasagna out of the oven and sprinkle the rest of the mozzarella cheese on top. Place back into the oven for 20 minutes, uncovered. 

Pair a slice of this with a big ol' bowl of greens and you've got yourself a tasty and (pretty) healthy dinner!

What’s Been in My Lunch Lately

Hello, hello! How are you all doing? I hope that your weekend was full of relaxation time with just the right amount of fun :) 

If you’ve been reading my blog posts or even Instagram posts you know that I started a new job recently, and with a job comes figuring out what to pack for lunch! I’m hoping to write a post about my job and schedule it for later this week to give you all a little life update too. But anyways, back to the main attraction: lunch food.


So, where I work does have a cafeteria with some good options – they have a salad bar, etc., but I’ve still been trying to pack my lunch each day. Why you ask? 1. It saves me money and 2. I’m less tempted to pick something unhealthy. Can you guys relate to this? If I don’t pack my lunch and have all of these options in front of me I’m more likely to say “Oh, I’m just going to get some French fries, it’s no big deal.” Packing my lunch completely takes this out of the equation – I pack something healthy and that’s what I eat!

I’m totally a creature of habit when it comes to lunch. I’ll make and pack the same thing for about 2-3 weeks until I get sick of it, and then I’ll make something else for 2-3 weeks, and so on. I’m always looking for new healthy, tasty, and satisfying lunch options and I figured I’m not the only one so I thought I’d share what I’ve been packing with all of you!

I’ve been keeping it real simple recently. Let me run you through everything that is in my lunchbox.

I eat breakfast at home so that doesn’t come with me (recently it’s been some oatmeal with cinnamon and a sliced banana) so the first thing that I pack for the day is a morning snack. My snack for the morning has been the same since I started work about four weeks ago – a sliced apple with a packet of Justin’s peanut butter. I slice my apples the night before work and they’re still nice and crisp by the time I eat them the next morning. I love the packets of Justin’s peanut butter because they’re just the right amount and easy to throw in my lunch box!

The apple and peanut butter holds me over until lunch, which I usually eat around 12 or 12:30pm. I’ve also been keeping my lunch super easy and simple too – I buy a bag of Italian salad mix and a bag of spring mix at the grocery store and mix that in a good-sized Tupperware container. I top that with just a little bit of freshly shaved parmesan cheese and chicken that I sauté in EEVO. It’s easy to throw together, delicious, and satisfying. I also love knowing that I got a good amount of my greens in for the day! The dressing I use is Tessamae’s and you can find it at Whole Foods. It’s my favorite brand of dressings by far!

I also pack some Simple Mills cheddar crackers (or the sea salt flavor). For me, I need to have something crunchy in my lunch and these totally do the job. The ingredient list gets an A in my book - simple, few, and GOOD ingredients. 

The final thing that goes into my lunch box are some mixed nuts. If hunger strikes in the late afternoon, I’ll munch on those!
