Foodie Favorites + Life Happenings

Hey there, friends! It’s been awhile. Life has gotten pretty darn busy around here! Between work, one of my friend’s bachelorette’s party, planning for my sister’s bridal shower (and now planning her upcoming bachelorette), studying for my personal training cert, and just STUFF – something had to give. If you’re still reading this post today, THANK YOU for sticking with me. Joyfully Jenna is still up and running, and more posts on their way! I’ll have a post on my sister’s bridal shower coming up with lots of fun DIYs and planning tips (a little sneak at one the pictures from the shower below), one of my new go-to lunch recipes, and some more fun stuff. Stay tuned!

Today I thought I’d stop by with some of my current Foodie Favorites. Fun, right? I always love to read other blogger’s posts like this, so I hope you’ll enjoy this one! I’ve found some products over the past month or so that I really LOVE and I think you will too. Let’s get right into it!

1. Trader Joe's Everything But the Bagel Seasoning

This stuff has been EVERYWHERE! I think I’ve seen it show up on about 10 different foodie blogger’s Instagram stories. BUT man, this stuff is good. If you like everything bagels you’re going to love this stuff. My favorite way to use it is on my eggs in the morning for breakfast. So darn GOOD! Definitely grab one (or ten) of these on your next Trader Joe’s run.

2. REBBL's Dark Chocolate Protein Shake

So, I pass Whole Foods on the way home from my gym, which can be very dangerous and quite $$$$. A couple of weeks ago I decided to stop in after taking GRIT and Body Pump (I’ll have another post on these two classes soon – they’re my absolute current favorites!) and I was looking for something high in protein to refuel my muscles after the lengthy workout. I had seen the REBBL brand pop up here and there on different foodie accounts I follow, so I decided to give it a go. I chose the dark chocolate flavor and was more than pleasantly surprised. No chalky taste, just pure chocolatey goodness. With 16 grams of plant protein and the delicious taste…what more could a girl ask for?

3. Health Ade's Kombucha

Oh, Whole Foods. It’s just so dangerous, guys, I’m tellin’ ya! To be honest, I never really got super into kombucha. I really wanted to like it because of all of its’ health benefits, but I never found a flavor I loved…until I tried Health Ade’s pink lady flavor AND their ginger lemon flavor. Oh. My. GOODNESS. If you’ve tried kombucha before and weren’t a fan, I encourage you to grab one of these the next time you’re at Whole Foods. I could drink these all day long. BONUS: Whole Foods has been running a 2 for $6 deal pretty frequently. Be on the lookout!

4. Califa Farms Coffee Creamer

Last, but certainly NOT least. This coffee creamer is my new favorite, hands down. They have a few different flavors, and my go-to is the vanilla. I’ve found it at Whole Foods, Target, and my local Giant grocery store. If you’re a coffee lover that likes to add a little bit of creaminess and sweetness, this is for you!

Alright, pals! I’m off to do some studying, but I CAN’T believe I forgot to mention that my sister and future brother-in-law GOT A PUPPY a few weeks ago. So, I’ll leave you with a picture of Mac, my fur nephew. Enjoy!

Life Lately & A Delicious Frittata Recipe

Happy Sunday, friends! How's it going? I took last week off from blogging because we had some birthday celebrations going on. My birthday was the 19th of April and we celebrated with my family last weekend so I just wanted to take some time to relax and enjoy. We also celebrated this cutie's 14th birthday...

Isn't Munchkin the cutest?! #crazydoglady

The weekend before my birthday I celebrated with a few of my girlfriends at a local winery called Va La. If you live in the Delaware/Philly area I definitely recommend checking this winery out! They're a very small vineyard and only make 4 wines each year, but man, they're GOOD! Their wine tasting is on the pricier side at $20 per person, but their pours are very generous. Each wine you taste they pair with a piece of delicious local cheese, and the tasting ends with a chocolate truffle. I mean, need I say more? My favorite wine was their Silk Red which is a dry rosato. Seriously, go check Va La out!

So, that's been life lately - along with work, exercising, and all of the normal good stuff :) Now, onto what I'll be eating this week for breakfast...

This frittata recipe from Pbfingers blog is a delicious, savory, and healthy breakfast that can be made on Sunday and heated up during the week for breakfast. I love my morning oatmeal, but I'm getting a little bored of it so I'm excited to change it up with this frittata. I think you'll love it too! Follow the recipe below and let me know what you think :)

  • 1 tablespoon EEVO
  • 1/2 sweet onion, diced
  • 1 small green pepper, diced
  • 2 large chicken sausage links, chopped
  • 2 large heaping handfuls of fresh spinach (about 4 cups)
  • 3 eggs
  • 4 egg whites (I used 3/4 cup egg whites from a carton)
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

  1. Set oven to broil on high.
  2. Heat olive oil over medium heat in a large, oven-safe skillet. Sautee onion and green pepper until softened (about 3-5 minutes).
  3. As onion and pepper cook, combine eggs, egg whites, salt and pepper in a medium bowl, stirring to combine.
  4. Add the chicken to peppers and onion and cook for an additional 2 minutes. Add spinach and cook until wilted, about 1 minute.
  5. Add eggs to skillet and lightly stir. Allow eggs to set (do not stir!) until sides are firm and middle still appears slightly wet, about 4 to 5 minutes.
  6. Transfer pan to the oven and broil for 3 to 5 minutes, until top of frittata begins to brown slightly.
  7. Slice and serve!

I recommend keeping a paper towel on top of your frittata while storing in the fridge to keep moisture from accumulating. Bon appetit!

Life Lately + My New Job

Hello there, pals! I hope that your weekend was fun and relaxing! Here in Delaware we had AMAZING weather for this time of year so I made sure to get outside a decent amount with my family. My mom and I went on a 3-mile walk on Saturday morning, and then my dad and I took Lola to the park for a walk in the afternoon. On Sunday, my mom and I went over to my sister's house to hang out for a bit and to enjoy more of the sunshine :) I can't wait until this warm weather is a consistent thing - I love getting active outdoors!

Anyways, I'm stopping by with a kind of random thoughts post...a bit about the blog, life lately, and what my new job looks like!

As far as the blog goes...

I think for now I'll be posting once per week - it seems like the most realistic goal in my mind at the time.  I'm hoping that as I continue to adjust to my new schedule I'll be able to eventually increase to twice or three times per week. Thanks for staying with me through this adjustment - you guys are the best!

Life lately has been...

A whole lot of adjusting to a new schedule, figuring out my go-to dinners for busy weeks, when to fit my workouts in, hanging with my family, planning my sister's bachelorette party, and catching up with a few friends here and there!

We finally booked a rental for my sister's bachelorette weekend so I'm SUPER excited to start planning all of the fun details. I've been browsing Etsy and Pinterest like crazy for fun decoration ideas. It's a tad addicting! You guys can expect to see a lot of DIYs and details about the bachelorette and bridal shower this summer. Weeeee! :)

Anyways, the biggest news of life lately is obviously my new job.

So, I figured I'd give you guys a quick rundown of what it is! My title is Program Manager for a company called HealthFitness - they contract out to companies that don't have in-house employee wellness departments. So, technically I work for HealthFitness, but when I go to work everyday I'm going to a specific client site where I work as essentially a Wellness Coordinator. I absolutely love it so far - it really is exactly what I wanted to do and I feel very lucky to have found it!

If you're unfamiliar with this field and aren't really sure what a Wellness Coordinator would do - In a nutshell I'm planning and rolling out health programs or challenges to encourage associates to lead healthier lives and move through the behavior change process. There's a whole lot more to it, but I don't think any of you want that many details haha.

Anyways, that's a short peak into life lately with me! Like I said, just a lot of adjustment, new job, and spending time with family and friends.

What's new with you guys? Have you planned a bridal shower or bachelorette party before? Started a new job recently? Let's chat in the comments!

What’s Been in My Lunch Lately

Hello, hello! How are you all doing? I hope that your weekend was full of relaxation time with just the right amount of fun :)

If you’ve been reading my blog posts or even Instagram posts you know that I started a new job recently, and with a job comes figuring out what to pack for lunch! I’m hoping to write a post about my job and schedule it for later this week to give you all a little life update too. But anyways, back to the main attraction: lunch food.

So, where I work does have a cafeteria with some good options – they have a salad bar, etc., but I’ve still been trying to pack my lunch each day. Why you ask? 1. It saves me money and 2. I’m less tempted to pick something unhealthy. Can you guys relate to this? If I don’t pack my lunch and have all of these options in front of me I’m more likely to say “Oh, I’m just going to get some French fries, it’s no big deal.” Packing my lunch completely takes this out of the equation – I pack something healthy and that’s what I eat!

I’m totally a creature of habit when it comes to lunch. I’ll make and pack the same thing for about 2-3 weeks until I get sick of it, and then I’ll make something else for 2-3 weeks, and so on. I’m always looking for new healthy, tasty, and satisfying lunch options and I figured I’m not the only one so I thought I’d share what I’ve been packing with all of you!

I’ve been keeping it real simple recently. Let me run you through everything that is in my lunchbox.

I eat breakfast at home so that doesn’t come with me (recently it’s been some oatmeal with cinnamon and a sliced banana) so the first thing that I pack for the day is a morning snack. My snack for the morning has been the same since I started work about four weeks ago – a sliced apple with a packet of Justin’s peanut butter. I slice my apples the night before work and they’re still nice and crisp by the time I eat them the next morning. I love the packets of Justin’s peanut butter because they’re just the right amount and easy to throw in my lunch box!

The apple and peanut butter holds me over until lunch, which I usually eat around 12 or 12:30pm. I’ve also been keeping my lunch super easy and simple too – I buy a bag of Italian salad mix and a bag of spring mix at the grocery store and mix that in a good-sized Tupperware container. I top that with just a little bit of freshly shaved parmesan cheese and chicken that I sauté in EEVO. It’s easy to throw together, delicious, and satisfying. I also love knowing that I got a good amount of my greens in for the day! The dressing I use is Tessamae’s and you can find it at Whole Foods. It’s my favorite brand of dressings by far!

I also pack some Simple Mills cheddar crackers (or the sea salt flavor). For me, I need to have something crunchy in my lunch and these totally do the job. The ingredient list gets an A in my book - simple, few, and GOOD ingredients.

The final thing that goes into my lunch box are some mixed nuts. If hunger strikes in the late afternoon, I’ll munch on those!

And that’s it! I hope that if you were looking for something for lunch this gave you some new ideas :) I’m going to try something new out in the next few weeks, so I’ll make sure to post an update of my lunchbox then!

What do you pack for lunch? I'd love to get some ideas! Let's chat in the comments below :)

*What works for me in terms of snacks and lunch may not work for you. This post is solely meant to give you inspiration or ideas for what to pack for your lunch! In no way am I giving out dietary recommendations, as I am not a Registered Dietitian.

Terrain Garden Cafe: One of My Favorite Places

Hey, guys, happy Wednesday! We're getting prettty close to the weekend :)

Today's post is for my local readers. I wanted to share a bit about one of my favorite places with you!

One of my most favorite places is Terrain, which is in Glen Mills, PA.

Terrain is a garden center, gift store, cafe, and restaurant all in one. I love going there to just to look around! If you're like me and love things that are festive, you would love Terrain. They have tons of pumpkins, mums, and gourds outside. They also now have Christmas displays inside complete with trees, lights, and ornaments. I know, I know, it seems too early, but honestly I love anything holiday related, so I'm not complaining.

Their food is also amazing, always. They serve organic dishes that are original and downright delicious! They're BYO which is also a nice touch.

Yesterday I went just to grab a hot drink to cozy up with and browse their gift store. I got my favorite drink - the apple cider chai. I still haven't gotten around with making one at home, but I'll keep ya posted when I do. Until then, if you live nearby the Glen Mills/Garnet Valley area head to Terrain to get yourself one - your tastebuds will not be disappointed!

I also walked around outside and enjoyed all the Fall feelings that I got from the never-ending mums, pumpkins, and gourds,

And then headed inside to the gift shop to see all of the Christmas decorations which made me want to start playing Christmas music and baking cookies ASAP...

These hot cider candles smell AMAZING and so cute that they come in a mug! It took all of my willpower not to buy one :P

As silly as it may sound, I think it's important to have a few "happy" places, like Terrain.

You know those places that just make you happier by being there? That's Terrain. It's one of those simple things that makes me happy by just going and looking around. Maybe it's because I love their love for the Holidays, or maybe it's how good the food is, or maybe it's a combination of a little bit of each! Either way, I think it's nice to have a few favorite places to go when you just need a little pick-me-up. So, if you're local to the area, head to Terrain this weekend. I promise you'll leave with a smile on your face, but I can't promise you that you'll leave with a full wallet - that place is dangerous, friends!

What's one of your "happy places"? I'd love to know! Also, if you're a local reader let me know if you've been to Terrain before! Or if you haven't been and go this week, let me know how you like it.
