The Easiest, Healthiest, and Most Delicious Popsicles!

Hey everyone and happy Wednesday! Things are getting back to normal around here and Munchkin is slowly feeling better - phew!

It's been pretty hot out around here, in the 90s almost everyday, so I've definitely had homemade popsicles on my radar. I looked around Pinterest to find a recipe that looked good and didn't use any added sugar. I found two different recipes that looked pretty delicious to me, so if you don't think these look good, check back soon for a different popsicle recipe! 

The one I'm talking about today only requires three ingredients - that's right, only THREE! You'll need strawberries, watermelon, and one lime, along with some popsicle molds. I got my popsicle molds at Target, but these popsicle molds on Amazon (click here) got great reviews, so if you don't have any, try out those!

As far as the recipe, it's quite possibly the easiest process ever. You'll need to cube the watermelon, cut off the strawberry stems, and juice & zest the lime. The measurements are:

  • 3 heaping cups of cubed watermelon 
  • 1 heaping cup of strawberries (fresh or frozen)
  • zest and juice of 1 lime

Once you've prepped your ingredients, throw them all into your blender (I used my trusty Vitamix again) and puree until smooth. After that, go ahead and pour the mixture into your popsicle molds, place them in the freezer, and freeze for about 3-4 hours, or until completely frozen.

Once you're done, you'll have popsicles that look like the ones above to enjoy! As far as the taste, they're SO good! They taste like a typical popsicle, you would never know that the only ingredients are fruit. Two thumbs up for this recipe - I highly recommend you give them a try!
