Asian Turkey Meatball Dinner Recipe

Hey there, pals! How's it going? It's Sunday morning as I write this post, and I start my new full-time job tomorrow so this week is going to be a busy one full of getting adjusted to a new schedule. So, I apologize in advance if I end up being a bit MIA this week. I'm going to do my best to start planning out posts a bit more so I'm on a more regular posting schedule! 

I'm stopping by today to share with you a new dinner recipe I tried. I don't know about you, but I'll make the same dinners for a period of time and then... I get so bored of them. Anyone else with me? So, off to Pinterest I go (of course) to find some new recipes to try out. I've seen different variations of Asian Turkey Meatball recipes floating around for awhile, but I've never gotten around to trying them. So, when I saw this recipe on Pinterest (originally from Chef Savvy) I knew I had to give it a try!

Ingredients for the meatballs:

  • 1 pound ground turkey 
  • 3/4 cup panko breadcrumbs 
  • 3 cloves garlic, minced
  • 1 whole green onion, both green and white parts
  • 1 large egg
  • 1/2 teaspoon sesame oil
  • 1 tablespoon low sodium soy sauce

Ingredients for the sauce:

  • 1/4 cup hoisan sauce
  • 1/8 cup low sodium soy sauce
  • 1 tablespoon water
  • 1 teaspoon sesame oil
  • green onions for serving


1. Preheat the oven to 400 degrees.

2. Add your turkey, breadcrumbs, garlic, green onions, egg, sesame oil, and soy sauce to a bowl. Mix with your hands until combined. 

3. Grease a baking sheet. Portion out and roll 12 meatballs. You may find that working with slightly wet hands helps.

4. Place meatballs on the oiled baking sheet and cook for 15 minutes, or until cooked all the way through. You'll want to flip them halfway through.

5. While the meatballs are cooking, add all of the sauce ingredients to a bowl and stir until combined. Set aside.

5. Take the meatballs out of the oven and toss with the Asian sauce. Enjoy with a side of brown rice (or whatever side you'd like!).

Hey there, friends! Happy Monday and Happy New Year! I hope that 2017 has treated you well so far. Anyone else struggling with a case of the sniffles after the busy holiday season? It seems like a lot of people are getting hit with a cold right now, so I wanted to stop by tonight to share a natural cold remedy with all of you that I originally found on Simple Green Smoothies.

This recipe for tea is easy, only uses three ingredients, and can be stored in the refrigerator for future use (it keeps for about two months in the fridge). Let's jump right into it!


Like I said, this recipe only calls for three ingredients: lemon, ginger, and honeyLemon is high in vitamin C, which keeps our immune system strong to fight against those pesky colds. Ginger assists you in sweating out the toxins in your body, which is helpful when you have a cold. Ginger is also a real winner when it comes to nausea or dizziness! Last, but certainly not least, honey will soothe your sore throat and also is a natural cough suppressant. Pretty cool, right? Oh, and the natural sweetness of honey also balances out the lemon and ginger flavors - making this tea nice and soothing to sip on!


  • 2 lemons 
  • 2 pieces of fresh ginger (about the size of your middle and index finger)
  • Honey (I used Makuna honey, but after making it, raw honey may work better as makuna honey is very thick)
  • 12 oz mason jar 

I found my fresh ginger at Trader Joe's for under $2, which is a pretty awesome price! So, if you have a Trader Joe's near you I would highly recommend shopping for this recipe there.


1. Slice lemons and ginger. Place the slices in the mason jar, alternating layers of the ginger and lemon slices. 


2. Slowly, pour honey over the lemon and ginger. Allow the honey to continue to sink down around the layers. Fill to the top of the jar and then seal with the mason jar lid.


3. Put your natural cold remedy in your refrigerator. As time goes by, the mixture will turn into a loose jelly. 

That's it! How easy is that? Once you're ready to have some tea you'll just scoop 2-3 tablespoons of the mixture into a mug full of hot water. Make sure you get some slices of lemon and ginger in your mug too. You'll allow it to steep for about 3-4 minutes and then enjoy! Bring on the soothing goodness of your natural cold remedy!

Butter Rich Spritz Christmas Cookies

Hey there! I hope that your week has been a good one so far. We're almost to the weekend, friends! I know I promised you that I would have my Mommom Minnow's famous Christmas cookie recipe up on the blog last night, but I had one of those days where the time just got away from me. I'm sorry, guys! First, let me tell you that Mommom Minnow was literally the QUEEN of baking Christmas cookies. I mean, she started the day after Thanksgiving and kept on baking until Christmas Eve. I remember going into one of the bedrooms in her house and there were just stacks of tins in there that filled up the majority of the room. I don't know how she did it honestly! Baking that many cookies is not an easy job. 

Sadly, Mommom Minnow passed away when I was in high school. So, since then my sister and I have really tried to keep her Christmas cookie recipes alive by making them each year. The one I'm sharing with you today is our family's all time favorite cookie. I mean, when I make these I literally have to hide the tins or else they won't make it to Christmas. So, without further ado, let me finally give you that recipe so you can whip up some of these delicious cookies and be the most popular person at your family's Christmas gathering :) 

Butter Rich Spritz Cookie Recipe

The Ingredient List:

  • 2 1/2 cups four
  • 1/2 tsp salt
  • 1 cup butter
  • 1 1/4 cup powdered sugar
  • 2 egg yolks, or 1 whole egg (I usually do 1 whole egg)
  • 1/2 tsp almond extract
  • 1 tsp vanilla 

Mommom Minnow's Directions:

  1. Preheat your oven to 400 degrees. 
  2. Sift together 2 1/2 cups flour and 1/2 tsp salt.
  3. Cream 1 cup butter, and then gradually add your 1 1/4 cup powdered sugar. Cream well. 
  4. Blend in 1 whole egg (or two egg yolks), 1/2 tsp almond extract, and 1 tsp vanilla.
  5. Add your dry ingredients gradually and mix well. 
  6. Get out your cookie press, and add a small amount of dough into the cookie press. Press cookies onto un-greased cookie sheet. 
  7. Bake at 400 degrees for six to eight minutes. 

As you can see in the instructions, you will need a cookie press for this recipe - you can find them at most kitchen stores (I'm sure places like Bed Bath & Beyond and Target have them too). I will tell you to make sure that you get a quality cookie press, because a cheap one is just going to drive you nuts (been there, done that)! This is the cookie press that I've used for the past few years, and I've really liked it. The reviews for it are great, so other people must have success with it too!


Alie and I always use the Christmas tree cookie press cut out, and the wreath. We usually top them with red and green sprinkles as well as some colored nonpareil sprinkles.


Making these cookies is so special to us since it reminds us of our sweet Mommom Minnow. I can only hope that you'll enjoy her recipe as much as our family has throughout the years! Green Banana Muffins Recipe

Happy Monday, friends! I hope that your weekend was the perfect combination of fun and relaxing. It was my older sister, Alie's, birthday on Saturday so Friday night and Saturday morning I spent some time baking lemon ricotta cookies and a coffee cake for her Saturday night birthday dinner. We usually celebrate birthdays with dinner and cake at my parents' house, so that's what we did! It was a fun night because we got to talk a lot about my sister and soon to be brother-in-law's new house that they'll be moving into this upcoming weekend. My sister actually asked me to make my crockpot chex mix for move-in day, so I'll be whipping up a batch of that later this week. I know I promised you all the recipe for my Mommom Minnow's Christmas cookies that I posted on Instagram stories last week, but I wanted to start off the week by sharing a healthy recipe. If you're looking for the Christmas cookie recipe, stay tuned! It should make its appearance by Wednesday.


Alright, so I don't know about you, but it's about this time every year that I really need to get myself in check. I'm making loads of Christmas cookies and it seems like everywhere I go there's a high-calorie, unhealthy treat that looks way too delicious to pass up! So, I always know that around now is the time to pump up my intake of greens, lean proteins, and fruits. I've been trying to hop back onto the smoothie train, but when it's chillier out it's hard for me to want to sip a cold drink in the morning (or really at all during the day), and that's where I usually sneak in a good bit of greens. So, I started digging around for some other way to get some greens in, and voila! I stumbled upon Kristin Cavallari's Green Banana Muffin recipe. 

Yes, this recipe is from the Kristin Cavallari that appeared on Laguna Beach. Kind of funny, right? She actually has a new cookbook coming out sometime soon called True Roots, I believe. So, if you try out this recipe and like it, be on the lookout for the release of that book! Now, let's get into the recipe.

The ingredients you'll need are...

  • 2 cups spelt flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp fine-grain sea salt
  • 1 bag (6 oz) baby spinach
  • 3/4 cup real maple syrup (no Log Cabin or anything with added sugar)
  • 1/2 cup plain unsweetened almond milk
  • 1 flax egg**
  • 1/4 cup applesauce
  • 1 1/2 tsp vanilla extract
  • 1 1/2 cups mashed banana (about 3 small or 2 large bananas)

If you've never heard of spelt flour, it's a healthy ancient grain that can be used as a flour substitute. Spelt flour has TRIPLE the amount of fiber than white flour, and to be honest I don't think it tastes different - at least not in this recipe. I found mine at Target!

Also, to make your flax egg you're going to combine 1 tablespoon of ground flax seed with 3 tablespoons of water. You'll let those two hang out in a bowl for about ten minutes, or until it becomes a gooey consistency. I'd never heard of a flax egg before this recipe, but the consistency of it does serve the purpose of a regular egg! 

Let's talk about how you'll make your green muffins...

1. Preheat your oven to 350 degrees. Line your muffin cups with paper liners. 

2. In a large bowl, go ahead and sift together your flour, baking powder, baking soda, and salt. In a food processor or blender (I used my trusty Vitamix), combine the spinach, maple syrup, almond milk, flax egg, applesauce, and vanilla and blend it until completely pureed. 

3. Add the wet ingredients and the mashed banana to your dry ingredients and stir until it's well combined. 

4. Fill each of your muffin cups about three-quarters full. Bake for 20 to 25 minutes, or until a toothpick inserted comes out clean. Let your muffins cool for about ten minutes, and then enjoy!


Don't let the color of these muffins (or the amount of spinach) scare you off! I swear that these muffins are tasty, and you taste the banana flavor, not the spinach. You just get the added bonus of getting in some greens in a yummy muffin! I think next time I'll even add some walnuts or dark chocolate chips to the recipe, which would add to the flavor and consistency even more. Yum!

Healthy Holiday Cookie Recipe

Hello there, friends! I hope that your Monday went wonderfully. It's hard to believe it's already December 5th - only twenty days until Christmas! With Christmas right around the corner, we know that we're going to be around loads of cookies and other treats as well. I really wanted to find a healthy cookie recipe that I could make for Christmas so I wouldn't feel like I only had unhealthy options. So, if you'd like to have a healthy treat on your cookie platter at Christmas that's extremely delicious, keep on reading!


These chewy cookies from Amy's Health Baking are the perfect sweet treat for the holiday season. The rich dark chocolate balances out the the tart cranberries, with a dash of cozy cinnamon flavor. These yummy cookies will stay fresh for at least four days if stored in an airtight container at room temperature. 

For this recipe you're going to need:

  • 1 cup instant oats
  • 3/4 cup whole wheat flour
  • 1 1/2 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 2 tbsp coconut oil, melted and slightly cooled
  • 1 large egg, room temperature
  • 1 tsp vanilla extract
  • 1/2 cup pure maple syrup
  • 1/2 cup fresh cranberries, finely chopped
  • 3 tbsp chopped dark chocolate

Once you have all of your ingredients you'll follow these directions:

1. Whisk together the oats, flour, baking powder, cinnamon, and salt in a medium bowl. 


2. In a different bowl, whisk together the coconut oil, egg, and vanilla. Stir in the maple syrup. Add in the flour mixture, stirring just until incorporated. 

3. Fold in the cranberries and 2 1/2 tablespoons of the chopped dark chocolate. Chill the cookie dough for thirty minutes. 

4. Preheat the oven to 325 degrees and line a baking sheet with parchment paper for easy clean-up! 

5. Drop the cookie dough into 15 rounded scoops onto the prepared baking sheet. Flatten to desired thickness and width using a spatula. Gently press remaining chopped dark chocolate into the tops. Bake for 9-12 minutes. 


6. Cool on the pan for ten minutes before moving to a wire rack. 


Once the cookies have cooled off, go ahead and dig in! Believe me, you're not going to believe that these cookies are actually healthy :) My family already wants me to make more!
